But the VirtualSMC.kext contains the "missing" info.plist file:

Your config.plist also contains a couple if entries for newer Intel systems like for Haswell or Skylake generation.
Since I newer used OpenCore on an H61-based system, I'm not able to say if that might be one of the culprits.
